Last week, my office hosted a pot luck lunch to honour the departure of one of our FAVOURITE co-workers, Jane. Unlike the typical hum drum office potluck, this event came with a bit of a twist. Jane is a celiac, which means she can’t eat gluten, a pesky protein that can be found in wheat and many other grains. In order to give Jane a farewell worthy of Rafael Nadal (her favourite athlete of all time), we all decided to only bring food that Jane could munch on.
Now , I was in a bit of a pickle. I had already offered to let another co-worker of mine make Bruschetta (my normal potluck winning recipe) and I knew that someone else would make a quinoa salad (we ended up having two tasty submitions), so I decided to make something that I had never tried before.
The idea of chicken drumsticks struck me when I went to the grocery store and saw they were on sale. I took it as a sign from the food gods themselves and went to the Internet for inspiration on what sauce I was going to make. I came across the original recipe for this on the awesome website epicurious (thanks cousin John for the link). After a bit of searching, I decided that I liked the look of the Balsamic Soy chicken wings as the starting point of the recipe.
One of the features that I liked most about the recipe was that I had all the ingredients at home. There is nothing like finding a recipe and realizing that you have all the ingredients at home and don’t have to face the elements, regardless of weather conditions, for one key ingredient.
When making this recipe, one thing you should be careful is if you are planning on making it for a celiac, make sure your soy sauce is gluten free. In Canada, VH brand soy sauce is gluten free, which was perfect for me because that was the brand I had laying around. Besides that, there aren’t too many tricks I can offer. This recipe doesn’t aesthetically keep very well. While the next day, it will taste delicious, one the outside it kind of looks like a train wreck.
I will definitely make this recipe again, and might make the sauce just to use when cooking regular chicken breasts. It’s easy to make, and scores high on the taste scale. I’d say that this recipe makes about 4 servings if you were planning on making it a meal. Since the chicken was the only thing I had to buy for this recipe, I worked out the cost per serving to be $2.63 a serving.
- 3 pounds Chicken Drum sticks
- 2 T Olive Oil
- 1/2 t salt
- 1/2 t pepper
- 3/4 cup balsamic vinegar
- 1/4 cup soy sauce
- 2 T brown sugar
- dash of hot sauce
- Preheat oven to 500 and move the racks to the highest and lowest settings
- Line a shallow baking sheet with tin foil and put it in the oven
- Pat drumsticks dry and toss in oil, salt and pepper
- Take out baking sheet and place drumsticks on sheet
- Return to oven and bake, without turning, for 35 minutes
- Meanwhile, combine remaining ingredients in a sauce pan and bring to boil
- Let mixture simmer for 15 minutes, until it has thickened to about 1/3 of a cup
- After roasting, pull drumsticks out of the oven and let rest on pan for 1 minute
- Toss drumsticks in a bowl with the sauce until coated
- Wait 5 minutes, toss again
- Serve and enjoy
